I'm a company director - if I have previously assigned profits as dividends this tax year in a previous pay slip can I reassign them as pension contributions (and pay them into my pension) if I haven't yet submitted my self assessment?

Hi,
You would still declare this as PAYE income as it has already paid as this. What you then do with the salary payment is up to you.
