I am a UK resident and work as a consultant under my own Ltd Co. I have many customers in Dubai. If I have a seperate company in Dubai, would I still be liable for UK Corporation Tax on the profits?

Companies will pay tax in the UK if they are UK resident. Please see guidance on UK residence at: INTM120030 - Company residence: overview - HMRC internal manual.  
Companies which are not UK resident may still be chargeable to Corporation Tax if they fall into any of the categories at Corporation Tax for non-UK incorporated companies if they have a fixed place of business in the UK.
