If I have some overseas profit, but not all would transfer to the UK, should I report the actual transferred money to HMRC as my foreign income?

Hi,

The overseas profit should be shown in the self employment section, so that it can be included in the calculations for tax and National Insurance.  

If you had to pay foreign tax on the profit, then you will also show the profit in the foreign section along with the tax deducted and claim Foreign Tax Credit Relief.

Other than foreign income, I also have an overseas mortgage to repay, should I only have to report the income after deducting the repayment amount?

Hi KFLO

Payments to any mortgage do not qualify for tax relief.  
If the mortgage is for a property that is rented out, then the interest paid on the mortgage can be claimed for under residential property finance costs (box 24.1) on page F5 of SA106.
