Hi. I’m a UK citizen. I move between Spain and the UK several times a year. The agreement I have with my UK employer is that I have to work in the UK office for a total of 5 months across the year. The other 7 months, I live in Spain. But it is not a contiguous 7 months. Do I pay income tax in the UK or in Spain? Or maybe both?

You will pay tax in the country you are considered tax resdient. as your residence is for you to determine, please refer to RDR3 Statutory Residence Test
