This would be self employed income and if over £1000, you need to declare this in your tax return.
The sales would be the turnover for the year and then claim the trading allowance of £1000.
If you still have receipts for all the items sold, you can claim actual expenses if this is more beneficial.

If they pay out any dividends to you, yes you need to declare the dividend.

Police pensions are classed as government pensions and remain taxable in the UK.
To be exempt you would need to be a national and a resident of Spain.

If you breach the threshold temporarily but you can show that your turnover will not go over the deregistration threshold in the next 12 months then you can apply for an exception from registration.
