Your employer would normally do this and ensure the payment is not taxed.
However, if they tax it, you will need to proved evidence and a copy of your employment contract for any refund to be considered.

If the actual gain itself is over £10,000, it will need to be a tax return that is submitted. any additional tax due is to be paid by the executor or the estate.

No. under the terms of the double taxation agreement, as the work was done on Hong Kong soil, this payment is only liable there. You don't declare it in the UK.

Your employer does not need to set up a UK presence to allow you to continue to work for them once you relocate to the UK.
Instead, you would need to arrange with your employer for them pay your salary gross from the time you move to the UK and complete a self assessment tax return every year.
You would need to complete SA100 (tax return) SA102 (employment) and SA106(foreign) if foreign tax is decutable.
You will need to convert the Euros to pounds sterling.

RE: State Pension and Self Assessment

This would depend on the country you receive your state pension from, some countries tax their state pension, such as Germany, meaning it is not taxable in the UK.
You would need to check the appropriate double taxtion agreement. Where there is not double taxation agreement with the UK, the pension would be taxable in both the UK and the country it is derived from.
