You will include the total income that is paid to you, and for any sales tax deducted you would include this as an expense.
For the exchange rate, you can use any of the spot rates on the HMRC site to your advantage.

As the work is not actually carried out in the UK this is not UK income. As you are not a UK resident there is no requirement to file a return.

Expenses need to be wholly, necessarily and exclusively related to the performance of your duties. Car wash costs do not meet this criteria as they are not wholly necessary and as such no relief is due.

Hi,
Under the terms of the double taxation treaty, payment for employment carried out in Hong Kong is only taxable there and does not need to be declared in the UK.
Due to the date of arrival in the UK, a return is not required.
